Onion Tomato Uthappam

Onion tomato uthappam is a healthy South Indian breakfast and tastes delicious. It is easy to make and can be served with chutney and sambar.
Onion Tomato Uthappam
Ingredients

Dosa batter - 2 cups
Large onion - 1/2 cup, chopped
Tomato - 1/2 cup, chopped
Green Chillies - 2 tbsp chopped
Coriander leaves - 2 tbsp
Oil/Ghee - To cook uthappam

Method
  1. Mix all the ingredients except oil and dosa batter in a bowl.
  2. Heat a tawa and grease with oil.
  3. Pour a ladle of batter and spread it into a thick circle.
  4. Sprinkle the mixture of toppings all over the uthappam. Drizzle some oil/ghee around it and cook covered in medium flame for 2-3 minutes.
  5. Flip on the other side and cook until lightly browned.
  6. Serve hot.

Crispy Fried Onions

Fried onions are used for garnishing various food recipes like biryani, soups and salads. They can be pan fried or deep fried.

Ingredients
  • Onions - 2
  • Corn flour - 1 tbsp
  • Oil - for deep frying
Method
  1. Peel the onions and cut them into thin slices lengthwise.
  2. Sprinkle corn flour on the slices and lightly toss them to coat.
  3. Heat oil in a pan for deep frying.
  4. Reduce the flame to medium. Add few onion slices and deep fry until golden brown and crisp.
  5. Remove and place on paper towels to absorb oil.
  6. Repeat the process until all onions are fried.
Tips
 - Corn flour is optional. In that case, pat dry onions well with kitchen towel to absorb the moisture. But if you want crispy ones corn flour is a must.
 - Ensure the oil is not very hot and cook in medium flame to cook thoroughly.
 - Do not overcrowd the slices and fry in small batches.

Onion Tomato Omelette

Onion Tomato Omelette is an easy breakfast dish which can also be served as an evening snack. This recipe yields 2 omelettes. Egg consumption consistently leads to increased levels of HDL which reduces the risk of many diseases.
Ingredients
  • Eggs - 2
  • Onion - 2 tbsp, finely chopped
  • Tomato - 2 tbsp, finely chopped
  • Red chilli powder - 1/4 tsp
  • Turmeric powder - A pinch
  • Garam masala - A pinch
  • Salt - 1/8 tsp
  • Butter - 2 tsp
Method
  1. Beat the eggs until frothy.
  2. Mix all the other ingredients except butter and whisk together.
  3. Heat the tawa and grease with butter.
  4. Pour half of the egg mixture and spread it evenly.
  5. Cover and cook in low-medium heat on both sides.
  6. Repeat the same for the remaining mixture.
  7. Serve hot for breakfast with toasted breads.

Onion Rice

Onion Rice is a quick and easy rice recipe and can be used for lunch box. You can also use leftover rice for this recipe.

Ingredients
  • Cooked Rice - 1 cup
  • Onion - 1, large sized
  • Cumin powder - 1 tsp
  • Coriander powder - 2 tsp
  • Garam masala - 1 tsp
  • Green chillies - 1, slit lengthwise
  • Mustard seeds - 1 tsp
  • Channa dal - 1 tsp
  • Urad dal - 1 tsp
  • Curry leaves - Few
  • Coriander leaves - To garnish
  • Salt - To taste
  • Oil - 1 tbsp
Method
  1. Heat oil in a wide pan and add mustard seeds.
  2. Once the mustard seeds start to splutter, add channa dal and urad dal. Fry till they turn light brown.
  3. Now add curry leaves, chopped onion and green chillies. Saute till the onion turns transparent.
  4. Add cumin powder, coriander powder, garam masala & salt and saute them for 2 minutes or till the raw smell goes. Sprinkle some water if required.
  5. Now add cooked rice and cook gently without mashing the rice for 5 minutes in medium heat.
  6. Adjust salt to taste and garnish with coriander leaves.
