Instant Rava Kara Paniyaram

Rava kara paniyaram is a simple delicious South Indian recipe which can be served as a breakfast or evening snack. They are crispy outside and soft inside and tastes great with coconut chutney.


Ingredients
  • Rava/Semolina - 1 cup
  • Curd - 1/2 cup
  • Grated carrot - 1/2 cup
  • Coriander leaves - 2 tbsp, finely chopped
  • Baking soda - a pinch
  • Salt - to taste
  • Oil - to cook paniyaram
     For the seasoning
  • Oil - 2 tsp
  • Mustard seeds - 1 tsp
  • Chana dal - 1 tsp
  • Urad dal - 1 tsp
  • Curry leaves - few
  • Ginger - 1 inch, grated
  • Green chilli - 1, finely chopped
  • Onion - 1, medium sized, finely chopped
Method
  1. In a bowl mix rava, curd and salt together with little water to form thick batter. Keep aside for 1 hour.
  2. Heat 2 tsp of oil in a pan and add mustard seeds.
  3. When the mustard seeds start to splutter add chana dal and urad dal. Fry till they turn light brown.
  4. Add torn curry leaves, grated ginger, green chilli and onion. Saute well until onion turns transparent.
  5. Turn off the stove and add this to the rava batter.
  6. Add grated carrot, baking soda and chopped coriander leaves to the batter and mix well. 
  7. Heat paniyaram pan and add few drops of oil inside the holes.
  8. Fill the holes with the batter.
  9. Cook covered in low flame. When the sides start to leave, flip it over to the other side.
  10. Cook in low flame until it turns golden brown. Repeat the same with remaining batter.
  11. Serve hot with coconut chutney.

Rava Upma|Semolina Upma

Rava Upma is a popular south indian breakfast dish which is very easy and can be done in a jiffy. You could use fine or coarse semolina but upma tastes better when made with coarse semolina.


Rava Upma

Ingredients
  • Rava/Sooji/Semolina - 1 cup
  • Onion - 1, medium sized
  • Green chillies - 1, slit lengthwise
  • Coriander leaves - To garnish
  • Mustard seeds - 1 tsp
  • Urad dal - 2 tsp
  • Cashewnuts - 3
  • Curry leaves - Few
  • Salt - To taste
  • Ghee - 2 tsp + 1 tsp
  • Oil - 1 tbsp + 1 tbsp
Method
  1. Heat 1 tsp of ghee in a pan and fry rava until it starts to give off a nice aroma. Transfer to a bowl and keep aside.
  2. Heat 1 tbsp of oil & 2 tsp of ghee in the same pan and add mustard seeds.
  3. Once the mustard seeds start to splutter, add urad dal and cashewnuts. Fry them till they turn light brown.
  4. Add curry leaves, onion and green chillies. Fry till the onions turn transparent.
  5. Now add 3 cups of water and adjust salt to taste.
  6. When the water starts boiling, simmer the stove and add the roasted rava little by little stirring continuously.
  7. Keep on stirring and add 1 tbsp of oil.
  8. Cover and cook for 5 minutes in low flame till all the water is absorbed and garnish with coriander leaves.
  9. Serve hot with coconut chutney or tomato chutney.
Tips
- You can also add boiled vegetables after the onion is cooked to make it more healthy.

Instant Rava Dosa

Rava dosa is a popular South Indian breakfast recipe and can be made in different ways. This recipe is easier to make and perfect for a quicker breakfast. You can also make onion rava dosa by sprinkling onions before pouring the batter.
Ingredients
  • Rava/Semolina - 1 cup
  • Rice flour - 1 cup
  • Maida/All purpose flour - 1/2 cup
  • Cumin seeds - 1/2 tsp
  • Whole black pepper - 1 tsp
  • Grated ginger - 1/2 tsp
  • Green chillies - 1, chopped
  • Salt - To taste
  • Oil/Ghee
Method
  1. Mix all the ingredients together in a bowl and add water to make a very thin dosa batter.
  2. Heat the tawa and grease with oil.
  3. Pour the batter start filling around the corner of the tawa. Then fill the inside portions.
  4. Drizzle some oil/ghee around the dosa.
  5. Cook till you see the dosa turning crispy and golden brown.
  6. Do not flip the dosa. Fold it and serve immediately with any chutney.
Tip
- Add water little by little so that it avoids forming lumps.
- The tawa should be very hot while pouring the batter.
- Mix the batter well before making every dosa.

Rava Ladoo|Semolina Ladoo

Rava laddu/Semolina ladoo is a delicious sweet recipe which is very popular and suitable for all occasions. It can also be used as a dessert for a party. It is made using rava/semolina/suji, cashewnuts and ghee.
Ingredients
  • Rava/Semolina/Suji - 1 cup
  • Sugar - 1 cup
  • Ghee - 1/3 cup
  • Cardamom - 2
  • Cashewnuts - 1/4 cup
Method
  1. Roast the rava in a pan in low flame for a while and grind into a powder using a blender.
  2. Grind the sugar with the cardamom into a very fine powder.
  3. Mix the powdered rava and sugar in a large bowl.
  4. To this mixture, add roasted cashewnuts and mix well.
  5. Heat the ghee and add to this mixture.
  6. Stir well using a ladle.
  7. When the mixture turns warm enough to handle, make small balls out of it.
Tips
- If the mixture is dry and couldn't able to make the balls, add some warm milk or ghee.
